Technical Data: The grapes were harvested in the cool morning to preserve the freshness and fruity flavors.
The grapes were received at the winery and immediately pressed to obtain the must.
After a 24-hour settling period, the Sauvignon Blanc must was fermented to dryness at a low temperature in stainless steel tanks.
The Chardonnay must was fermented in wooden barrels to preserve the wine's fruit aromas and flavors. The Chardonnay grapemust was fermented in oak barrels to enhance the complexity of the wine's aromas.
